I'm curious what some vanilla alternatives are—besides beaver musk.
I know that lacto-fermented Sempervivum tectorum has a somewhat vanilla-like taste/smell, but it's salty, of course, and not exactly like vanilla. I'm guessing a fermented product, if done correctly, could imitate vanilla.
