Here are some I harvested today. The overripe ones taste like vitamin C. These are awesome! :)

West India burr gherkins kept well for me (unrefrigerated), and after they started to shrivel, they still seemed to be good to eat!
They're good cooked with savory dishes (maybe sweet ones, too). They have nice taste and texture cut in pieces and cooked. They're potentially one of my favorite cooking vegetables, now (they're much preferable to cooked cucumbers, IMO; I'm not a big fan of cooked cucumbers). Other favorites include cabbage, edible gourds, and peppers. I should include tomatoes and maybe other stuff, too, but most tomatoes soften to more of a seasoning/sauce than a vegetable you can chew; some could probably work, though. I like Jerusalem artichokes baked plain (I haven't tried them with other vegetables).
