The first time I had something that someone told me was wasabi it instantly seared my nasal passages with strong, stinging pain (I was quite surprised). I had never had anything quite that powerful. So, I went about my life thinking that was wasabi (and people talked about wasabi like my impression was correct, too). Anyway, I had had horseradish earlier in life, and it was pretty different (not just in intensity, but in other ways, too). It wasn't as hot (although it was still pretty hot), and it had a different flavor and a different kind of heat.
So, recently, I decided to try to research more about wasabi since I thought it was pretty awesome (kind of how superhot peppers are pretty awesome). I was surprised to find out that real wasabi isn't supposed to be very hot, and the hot stuff is supposed to have horseradish in it. I guess people mostly eat real wasabi for flavor (not for a decongestant, and they seem to look unfavorably upon the hot wasabi, which is a little irritating, since that was what I was seeking).
Anyway, horseradish is supposed to be really easy to grow, and wasabi is supposed to be quite difficult. So, I'm not complaining that horseradish is the hot one.
Freshly grated horseradish is supposed to be hottest. Vinegar is supposed to help it retain its heat. I have no idea which horseradish breeds are the hottest, but I'd love to hear about them. I intend to grow a plant in 2019. Non-fresh horseradish is said to be bitter. Dried horseradish powder is supposed to retain some heat.
