So, a relative told me the other day that if you thaw a sealed 2lb block of frozen cheddar cheese at room temperature (not in the refrigerator) then it won't be crumbly (while if you thaw it in the refrigerator it will be crumbly). I was a bit skeptical (having seen a fair amount of crumbly thawed cheddar cheese), but it turned out to be true. I'm not exactly sure how long you're supposed to thaw it. The cheese I saw it done with was thawed for quite a long time (and people might not want to keep it out of the refrigerator so long). The cheese still tasted a bit different than cheese that had never been frozen, however.
